About the Recipe
What an amazing feeling to know exactly what is in your cookies, made with love and care, and no added ingredients from guilt or other toxins... they really are the easiest cookies ever with a crunch!

Ingredients
1 1/2 cup almond meal
1/4 cacao nibs OR your favourite dark choc chips
1/4 cup coconut sugar OR copped dates OR maple syrup (experiement - it will change consistency)
3 tbsp coconut oil (melted)
1 large egg OR 1 tbsp chia seeds mixed with 3 tbsp of water OR omit (when using maple syrup, no egg necessary)
1/2 tsp salt
1/4 tsp baking soda
1/2 tsp vanilla extract (optional)
Preparation
Step 1
Pre-heat oven to 180°C and line your baking tray with parchment paper.
Step 2
Mix all the dry ingredients together and mix all the wet ingredients together.
Now mix both mixes together to make your dough (if at this stage it is a bit sticky, turn off the oven and leave in the fridge for 30 min).
Step 3
Use a tbsp to scoop ball size dough on your tray. Gently press down into desired cookie shape.
Step 4
Bake for about 13 minutes or until the edges start to lightly brown.
